This design just makes me giggle! Don't get me wrong, I love mermaids, but its just hilarious ^_^ what are the odds of catching a mermaid in a river full of salmon ;)
So, as a 3D cake artist, its obvious to me to choose for a 3D design.
As many of my cakes, I just start and see where it ends, no planning, no proper thinking through, I just work from what I think is right, no measuring other than just with my eyes. I build up the frame, bake as many cakes as I roughly think needed for a certain amount of people, or size (in this case just the size I wanted the mermaid to be). Then I build it up, stack, fill, cover in ganache and then the fun part starts.

I can not tell you exactly what I used to make it glow, but it's safe to eat. We did however take it off before eating but thats because its a lot of fondant :)
The photos are pretty self explanatory to how I made the cake, it's just a lot of texture and looking to see if things look right, then paint it under the blacklight lamp to make sure I had it in all the right spots. For the mermaid, I kneaded the paint into the modeling chocolate, tested under the lamp for glow, ate it to try out taste, and then used it for real ^_^
Actually, I decided to make this cake one day before my mom's birthday, so this cake took me a day or less to make, including the mermaid.
Progress, since last years threadcakes cake took me three days ;)
It's a basic vanilla cake, filled with meringue buttercream, amaretto drizzle and peach confiture
