Hi everyone,
"You've GOT to do the Pancakes Mountain one, because you know pancakes are my all-time favourite food, and after all it is almost my birthday...". Owing to this contribution, and coupled with some handy photo skills, it seemed only fair to give dibs on the first piece of cake to my nearly 12 yr. old little brother. Given my love of baking he's become quite the cake connoisseur, so you know if he gives it a thumbs up it's praise indeed.(Thanks again Austin!)
The cakes baked were maple syrup and buttermilk flavour so as to tie in with the whole pancake theme, and they were filled and crumb coated with vanilla butter cream and covered with fondant. The teeny tiny trees, rocks and assorted animals were all hand modelled from fondant, which is also what was used to cover the 20 inch cake board. The waterfall effect was created by piping run out royal icing onto the front of the cake, which was also what I piped on to the top and bottom of the mountain. The brown edges and tops of the pancakes were hand painted with diluted food colours and the white foam is partly painted with food colour and partly piped royal icing where it needed to appear thicker.
The tricky part for me was creating the edible cloud and attaching it to the cake in one piece. I cut out a paper template and used a 50/50 mix of fondant and gum paste so it would still be soft to eat but would also hold its shape. After cutting it out and leaving it overnight to dry, I attached it to the cake with royal icing in the same shade as the trees. All in all the cake took about four pretty long but fun days to complete and was definitely a tasty way to be creative.
