Pancakes Mountain

Description
After sifting through all of the Threadless designs, I settled on Pancakes Mountain. Using a basic pound cake recipe with some lemon zest and orange juice thrown in (I figured it might as well have some kick to make up for the lack of icing), I formed each “pancake” in separate pie plates – to get that irregular looking shape.
Since my white cake tray looked a little too boring, I covered it in a layer of chocolate icing and crushed chocolate chips mixed with brown sugar to make it a bit more “dirt-like.”
Then it was time to start stacking! Each layer was stuck together with more chocolate icing and when I finally reached the top layer, I used a glaze (more orange juice and icing sugar) to mimic the syrup waterfalls. Some more pooled icing around the base of the cake and the addition and royal icing trees and it was done!
I was surprised at how pretty the thin layers and icing were when I cut into it – but even more relieved when the entire thing didn’t topple over!
