From the very inception of this cake, I decided to go big or go home. :)

The process began weeks ago with my deciding to enter, and choosing the 'Penguins on Holiday' design. This design is very me-- I've had a thing for penguins since the 7th grade when my dad and I went to Antarctica.

I wanted to do a big, carved cake, so I drew up a schematic and got to baking. And baking. And baking some more. I made 6 batches of doctored mix chocolate cake, a batch of scratch pound cake, and a batch of scratch cream cheese pound cake. All in all, this cake took: 4 9x13's, 1 9" round, 5 8" rounds, 1 9" square, 1 7" oval, and 5 6" rounds. It also took 8 or so batches of homemade buttercream, 3 batches of homemade rice krispie treats, some chocolate, several pounds of fondant, a little gumpaste, a couple pounds of isomalt, some luster dust, 50ish hours, and a whole lotta love.

... and friends to help me eat it!

After a lot of planning and cardboard templates, the icebergs were carved, coated and covered, and scored to look like cracked ice. The bear's body has 9 layers of buttercream-filled cake which I hand carved. The rest of the bear's features (and his little penguin friend on his shoulder) were sculpted from rice krispie treats.

All three penguins on the bergs are made entirely of cake (filled with buttercream), which were made from stacked circle cut outs and hand carved, coated, and covered. The penguin details are fondant and gumpaste with some hand painting. I particularly like the fanny pack, and the bow on the back of Ms. Penguin's hat.

The board was covered with melted isomalt over aluminum foil, which I colored 2 different shades of blue.

I painted on some final details on the icebergs and finished them off with a light dusting of sparkle dust. After doing nothing but this cake for over 2 days, I was ready to attach the ribbon to the board and welcome my guests to help me eat it! Everybody thought it was delicious. I think it will be a while before it's finished, so feel free to come have some. :)
