Description

I chose the design "Fight Back!" by Roberto Galvez for my 2D cake design. I started with 2 and one half batches of chocolate vinegar cake to get 2 10x2 inch layers. I let the cakes rest overnight and then began separating eggs (one dozen) for my filling and frosting. Since I needed a dozen egg whites for my mousseline buttercream, I created a chocolate custard filling to use up the yolks. The filling came out thick, creamy and delicious...just what I had in mind. I split the layers into four, and filled each layer with custard. When the mousseline was finished, I crumb coated my cake. While it was chilling, I took the frosting upstairs so try to match the green color to what I saw on the computer screen....my printer was not printing the colors very well, and I thought the were such beautiful and interesting shades, I wanted to get them just right. I then chilled the cake overnight. My husband was very gracious about the green dye I left all over the mouse.

The next day I began(again, upstairs in the computer room) to dye the fondant and to create Galvez's magical creatures. When I was satisfied I had my colors the way I wanted them, I began to roll out small pieces and make the shapes to forms the faces, bodies, and clothes. This took several hours. I used a food dye marker to draw some the the tiny details on the faces. I also cut out extra elements, because I wanted to incorporate them into some embellishment around the side of the cake. The fondant took several hours, but by late afternoon I was satisfied that I had recreated the design. I took the extra fish and feathers I had cut out, and used them with the black icing to repeat some of the motifs around the side of the cake. Now the clock was ticking, because I had arranged to serve the cake at a local art show called "Artstrong". Just as we were about to leave, I noticed that I had left off the orange string of beads around the girls neck. A few teeny weeny flattened balls of fondant later and much to my delight, my cake was finished. My husband, who portrayed the "Artstrong" mascot, The Strong Man, did the honors by cutting the first slice. We served the cake to about 40 very happy art lovers.
