This is my testimonial to butter.
Whatever kind of cake you are making, use butter – not margarine or Crisco, not oil or premade frosting or whatever other crazy thing is out there – use butter!
Most of the cakes I make end up going to work since there are 100 people to help me eat them. I ride a bike to work so the cakes usually end up in a box with bungee cords strapping it to the bike. With the odd shape of this one, I knew that wouldn’t work. This time I popped the cake in the freezer for 10 minutes to make sure the buttercream got nice and firm. Then I wrapped the cake in parchment paper and tinfoil, placed it in a bag and then popped it in the pannier on the back of my bike (take a look at my video to see Mr Penguin’s Wild Ride). Because of all the wonderful butter: my cakes always arrive in perfect shape.
If your cake can survive a bike ride over a wooden bridge: it just might be made of BUTTER.
