Summer Voyage

I've entered Threadcakes for the last two years and almost always chose a design that was skeletal. Well, not this year. I wanted to do a 2D cake that made no sense at all to an old person (no offense to the designer) and Summer Voyage caught my attention. I started with a basic lemon pound cake recipe that I've been using for years but changed it up a bit and added a splash of amaretto. The icing recipe was a traditional buttercream made from, of course, butter, a good scoop of plain greek yogurt, some meringue powder, vanilla extract and powdered sugar. The popsicle is a combination of fondant and marzipan. I baked, iced, molded, mixed and covered the cake in about 4 hours. My husband ate the cake even though he didn't care much for the amaretto flavor. I thought it was super!
